When we harvested the grapes we were always aware of the fact that one particular tank, which we used to call ‘Le Terrazze’ (the terraces) was the best, but producing just the one wine we were obliged to blend it in with the rest. Since we started to produce Chianti Classico in 2004 we decided not to make our Montecalvi wine anymore, but to bottle the one ‘Terrazze’ tank on its own to make a cru which we have named VV, short for Vieille Vigne. We decide to use the term Vieille Vigne in French because in France the old vineyard is the best one.<br /><br />The VV will be produced only in the best vintages.<br /><br />The grapes for the VV come from an old vineyard planted in 1932 on dry-stone walled terraces with a South-Eastern to South-Western exposure. The vines are mainly (95%) Sangiovese, with the remaining part being Cabernet Sauvignon vines which my father planted more than 15 years ago to fill in the spaces where the old plants had died. Since the beginning the old vine Sangiovese and the Cabernet Sauvignon was harvested and fermented together.<br />This vineyard was planted before the war therefore it is very dense: more than 6000 plants per hectare. Since they did not yet have modern agricultural machines at this time the rows were planted just wide enough for a man and his ox to fit in. This old vineyard is not pretty to look at, the plants are twisted and crooked just like an old man, but they have an incredible capacity to manage each season according to the weather pattern presented to them . The vines produce a reduced amount of buds in the spring so we find that we rarely need to do a green pruning on this vineyard. Not being overloaded with fruit, these vines suffer less from heat stress and have less difficulty ripening their load on difficult years.<br /><br />During the fermentation this wine is left alone, with no addition of yeasts or enzymes. It ferments calmly on its native yeasts. der wein schmeckt fantastisch, was i...hallo juppi,<br /><br />der wein schmeckt fantastisch, was in dieser preisklasse auch nicht anders sein darf ...<br />zu deinen zahlenspielereien: ich hatte jacqueline mal gebeten, mir eine kurze zusammenfassung zu ihrem weingut zu senden. folgendes habe ich erhalten:<br /><br />Montecalvi is a small wine estate in the heart of Chianti, specifically in the hilly area of Greve in Chianti, 20 km south of Florence. The Bolli family bought the Montecalvi estate in 1988. Since the 1991 harvest there has been a steady growth which has reached a qualitative standard in recent years that would be difficult to match anywhere.<br /><br />It should be remembered that Montecalvi has achieved the goal of producing a bottle of wine for each vinestock, a goal in world oenology which only small entities like Montecalvi can allow themselves.<br /><br />The south-westerly facing estate covers 10 hectares of which 3,5 hectares are vineyards. There are four small vineyards on hillsides at an altitude of around 300m above sea level, on land derived from sandstone.<br /><br />The three wines produced by the estate are Montecalvi Chianti Classico, which on really good vintages is 100% Sangiovese, Montecalvi VV (Vieille Vigne) a wine made mainly with old vine Sangiovese from the 1930’s. The third wine is San Piero, a Cabernet Sauvignon based wine with small percentages of Merlot, Syrah and Alicante Bouschet.<br /><br />The first vineyard is cultivated on terraces and was planted in 1932 with a density of 6,000 plants per hectare, and is mostly Sangiovese with a few plants of Cannaiolo and Cabernet Sauvignon. The second vineyard was planted in 1992 with the new Rauscedo R23 Sangiovese clone and very small percentages of Cabernet Sauvignon, Merlot and Syrah, at a density of 6,300 plants per hectare. The third vineyard was planted in 2001 with mainly Cabernet Sauvignon at a density of 7400 plants per hectare. The last half hectare was planted in 2007 with Sangiovese to increase the Chianti Classico production. All the vines are trained with the guyot pruning method with a charge of 6 buds per vine.<br /><br />The cultivation techniques are aimed at obtaining grapes with a great concentration and maturation. Green pruning is performed systematically in order to obtain a final production of less than 1 kg for each grapestock. <br /><br />The harvest is completed in two or three days and the bunches are laid down in 15 kg boxes which are taken straight away to the cellar were they are left over night to cool down before they are crushed.<br /><br />The grapes ferment in small 10 hl to 30 hl (792 gal.) on their native yeasts. During this time regular pumping overs will be carried out and a few days into the alcoholic fermentation a technique called the Delestage is carried out regularly on each tank. These cellar techniques encourage the extraction of colour, aromas and polyphenols from the grapes.<br /><br />The Chianti Classico carries out the malolactic fermentation in 500 lt. French oak barrels and subsequently left to age for a total of 6 months. The VV and San Piero are placed in barriques and 300 lt.
